Tips for the Perfect Apple Almond Pecan Cake


Don’t overmix the batter: Overmixing develops too much gluten, leading to a dense cake. Stir until just combined for a tender crumb.


Toss apples in flour before adding to the batter: This prevents them from sinking to the bottom and helps distribute them evenly.


Butter vs. Oil – Which to Use? Butter adds rich flavor, while oil makes cakes extra moist.


Enhancing the Nutty Flavor - Toast the pecans and almonds before adding them to the batter. This intensifies their nutty aroma and adds a deeper flavor to the cake.


 

How to Prepare Apple Almond Pecan Cake


Prepare the batter:


In a large mixing bowl, use a wooden spoon to combine the eggs, sugar, almond extract, and vanilla until smooth.



Add the ground almonds, flour, baking powder, and melted butter, and mix until well combined.


Core and dice 2 1/2 apples into 1cm pieces, and roughly chop half of the pecans - 50g.



Gently fold in apples and pecans.



Bake:


Pour the batter into the prepared pan. Scatter whole pecans; slice the remaining half apple and arrange it on top, then and flaked almonds.



Sprinkle with brown sugar. Bake for 35-45 minutes, or until a skewer inserted into the center comes out clean.

Apple Almond Pecan Cake


This cake pairs beautifully with a cup of tea or coffee. The almonds and pecans add a nice crunch, and the apples keep it soft and moist. It’s great for breakfast, dessert, or a snack!

Ingredients
  • 4 eggs

  • 200g caster (granulated) sugar

  • 1 tsp almond extract

  • 1 tsp vanilla bean paste (vanilla extract)

  • 100g ground almonds

  • 150g plain flour

  • 1 tsp baking powder

  • 150g unsalted butter, melted

  • 3 apples

  • 100g pecan nuts, (50g roughly chopped)

  • 30g flaked almonds

  • 2 tbsp brown sugar

To Serve

  • powdered sugar

  • vanilla custard, optional


Method

1. Preheat oven to 180°C (350°F/gas mark 4). Line a 20 x 20cm cake pan with baking paper.


2. In a large mixing bowl, use a wooden spoon to combine the eggs, sugar, almond extract, and vanilla until smooth. Add the ground almonds, flour, baking powder, and melted butter, and mix until well combined.


3. Core and dice 2 1/2 apples into 1cm pieces, and roughly chop half of the pecans (50g). Stir both into the mixture.


4. Pour the batter into the prepared pan. Slice the remaining 1/2 apple and arrange it on top. Scatter the remaining whole pecans and flaked almonds over the top, then sprinkle with brown sugar.


5. Bake for 35-45 minutes, or until a skewer inserted into the center of the cake comes out clean. Let the cake cool, dust with powdered sugar, then cut into squares and serve.
