Ingredients
150g (5.3 oz) dark chocolate (70% cocoa, high quality)
2 tbsp unsalted butter
2 eggs, separated
1/4 cup (50g) caster sugar
1/2 tsp vanilla extract
3/4 cup (180ml) heavy cream, cold

Freshly whipped cream

Method
1. Melt the Chocolate
Place the dark baking chocolate and butter in a heatproof bowl over a pot of simmering water (double boiler method). Stir gently until melted and smooth. Let it cool slightly.
