Tips for Making Perfectly Buttery Sablé Cookies
While making sablé cookies doesn’t require complicated techniques, it does call for attention and patience to achieve the ideal texture. The recipe uses just a few basic ingredients:
• Unsalted, cold butter for a delicate, crumbly texture.
• Powdered sugar, which gives a smooth consistency.
• Flour, essential for structure.
• Natural flavors like vanilla, orange zest, or lemon zest for added aroma and taste.
An essential step is chilling the dough for at least one hour. This allows the gluten to relax and makes the dough easier to shape. If the dough becomes crumbly or hard to roll out, wrap it again in plastic wrap and chill for another 30 minutes.

How to make French Sable Cookies
Using an electric mixer, or a wooden spoon, as in my case, cream the butter with powdered sugar and salt.
Add the beaten eggs, vanilla extract, orange zest and flour.
Divide the dough, make a thin disk, and wrap in baking paper. Refrigerate for at least 1 h.
Roll the dough on a lightly floured surface and cut out with your favourite cookie cutters.
Place the cookies on a parchment paper lined cookie sheet.
Bake at 280 C for 10-12 mins until lightly golden. Transfer them onto a cooling rack.

Ingredients
200g butter, at room temperature, cut into small cubes
140g powdered/icing sugar, sifted
1 pinch of salt
2 tsp vanilla sugar or 1 tsp vanilla extract
1/2 tsp orange zest (from a bio orange)
2 eggs, slightly beaten
400g flour, plain / all purpose, sifted
Method
Prepare the Cookies:
In a mixing bowl, using a wooden spoon or an electric mixer, cream the butter, salt, and powdered sugar until light and fluffy. Add the eggs, vanilla sugar (or vanilla extract), orange zest, and mix thoroughly. Add the flour and mix until the dough just comes together.
Dust a work surface with flour, then scrape the dough out of the bowl. Pat the dough together, cut it in half, and shape each half into a flat disc. Wrap the discs in baking foil or plastic wrap and chill in the refrigerator for at least 1 hour.
Bake the Cookies:
Preheat the oven to 180°C (fan 160°C, gas mark 5, or 350°F) and line two baking sheets with parchment paper. Set aside.
On a lightly floured surface, roll out the dough to a thickness of about 0.5 cm (1/4 inch). Sprinkle flour both under and over the dough to prevent sticking.
Cut out shapes with your favorite cookie cutters, ideally Christmas-themed, and place them on the prepared baking sheets. Using the tip of a skewer, make a small hole at the top of a few cookies.
Bake for 10-12 minutes, or until they are lightly golden around the edges. Transfer the cookies onto a cooling rack to cool.
