Ingredients

Serves 4

  • 4 thick slices Ciabatta bread, drizzled with olive oil

  • 4 slices of Prosciutto

  • 1 large avocado, halved, peeled, pitted, and thinly sliced

  • 1 yellow pepper, sliced

  • 2 large tomatoes, sliced

  • 1 red onion, very thinly sliced

  • swiss cheese (optional)

Method

1. Drizzle each slice of Ciabatta bread with a little olive oil. In a non-stick pan, toast the slices until golden, and set aside.

2. Crisp the Prosciutto in a non-stick pan over high heat until the edges curl and the slices become crispy and golden. Remove from pan and set aside.

3. Build the toasts by putting one slice of the crispy Prosciutto onto the toasted Ciabatta slice, and next alternate with the avocado slices, tomatoes slices and yellow pepper.

4. Sprinkle the thin slices of red onion over top, and finally finish with swiss cheese.

Enjoy!
