600g strawberries, sliced
200g Feta cheese, cubed
1 red onion, finely sliced
3 tbsp olive oil
1 lemon, unwaxed, zest and juice
1 tsp Dijon mustard
mint, leaves finely chopped
parsley, finely chopped
Method
1. Begin by slicing the strawberries and red onions, and cubing the cheese. Grate the lemon zest and squeeze the juice.
