This Greek Yoghurt Celeriac Chicken Salad is both incredibly easy to make and packed with healthy ingredients. With minimal prep time and a balance of crunchy veggies, lean protein, and creamy Greek yoghurt, it’s the perfect nutritious meal for any day of the week. Quick, delicious, and nourishing—what’s not to love?


The first time I made this Greek Yoghurt Celeriac Chicken Salad was on a whim. I had a few ingredients in my fridge that needed to be used up, and I was craving something fresh and healthy, but also filling enough to be a proper meal. I’d heard of celeriac before but had never actually cooked with it, so I was excited to try something new.


As I started peeling and grating the celeriac, I was surprised by how crunchy it was, almost like a cross between celery and a carrot. The smell was light and fresh, with a hint of earthiness. I added in the grated carrots and apples, and the combination already looked vibrant and colorful. It felt like I was making a salad full of energy.


The best part? I felt so good after eating it! It was refreshing, satisfying, and light enough that I didn’t feel weighed down, but still full. It’s one of those dishes that’s not only delicious but also makes you feel good, inside and out. Since then, this salad has become one of my go-to recipes for a nutritious, easy-to-make meal.

Why this Salad is Healthy

Celeriac (Celery Root): It’s a low-calorie, high-fiber vegetable that's rich in antioxidants, which support heart health and overall wellness. The minerals found in celeriac help balance the body's internal pH and reduce acidity.


Greek Yoghurt: The difference between regular yoghurt and Greek yoghurt is that the latter is thicker, creamier, and has twice the protein content. This is because Greek yoghurt is strained three times, which removes most of the liquid. The result is a rich and creamy texture that enhances the flavor of the salad while adding a protein boost.


Mayonnaise: The addition of mayonnaise to the dressing brings a rich creaminess to the salad, perfectly balancing the tangy Greek yoghurt.

Chicken Breast: Chicken breast is a lean source of protein, which helps keep you full and supports muscle maintenance. It's also low in fat, making it an ideal addition to this healthy salad.


Apples: They’re an excellent source of fiber and vitamin C, which promote digestive health and boost immunity. The fiber in apples helps keep you full longer, making this salad a satisfying meal.


Walnuts: Walnuts are rich in healthy fats, particularly omega-3 fatty acids, which support heart health and reduce inflammation. Adding walnuts to this salad gives it a delicious crunch while boosting its nutritional value.


Avocado: Avocados help reduce bad cholesterol levels and support heart health. They also provide fiber, vitamins, and minerals, including potassium, which helps maintain healthy blood pressure levels. .

Healthy Tips for a Perfect Salad:


For a Vegetarian Version: You can swap the chicken for a plant-based protein like chickpeas, lentils, or tofu. These options are equally nutrient-dense and will keep the salad filling and satisfying.


Make Ahead: This salad can be prepared ahead of time and stored in an airtight container in the fridge for up to 2 days. Just add the avocado and fresh garnishes right before serving to keep them fresh.


Meal Prep: This recipe is great for meal prep! Divide the salad into individual servings and store them in containers for easy lunches throughout the week.


Serve: For a boost of healthy fats and creaminess, add some sliced avocado on top. This salad can also be served on a slice of hearty sourdough bread or whole-grain crackers for extra crunch and flavor! Garnish with thinly sliced red onion and red pepper for a pop of color and added freshness.




How to Make Greek Yoghurt Celeriac Chicken Salad


Prepare the Salad

1. Start by peeling the celeriac, carrot, and apples.


2. Cook your chicken breast however you prefer: grilled, baked, or boiled. Once the chicken is cooked and cooled, chop it into bite-sized pieces. Chop the walnuts.


3. Grate the vegetables, then add the cubed chicken and walnuts. Mix well. For extra flavor and to prevent browning, drizzle the grated apples with a bit of lemon juice to keep them fresh.


4. Add the mayonnaise, Greek yoghurt, and freshly squeezed lemon juice to the grated vegetables. Season with salt and pepper to taste, then mix well until everything is evenly coated.


Serve:

5.  Transfer the salad to a platter or individual bowls. Garnish with fresh parsley.

Ingredients

  • 1 mid-sized celeriac

  • 1 large carrot

  • 2 apples

  • 100g walnuts, chopped

  • 1 large chicken breast

  • 150g-200g Greek yoghurt

  • 2 tablespoons mayonnaise

  • Juice from 1 lemon, freshly squeezed

  • Salt and pepper, to taste

To Serve

  • Red onion, thinly sliced

  • Celery leaves, for garnish

  • Fresh parsley, chopped

  • Avocado, sliced


 

Method

Prepare the Vegetables & Fruits
