Tomatoes Salad


This salad is a burst of fresh flavors! The mango adds the perfect touch of sweetness, while the avocado makes it creamy and satisfying.


Prep Time: 10 minutes 🍽 Serves: 2

 

Ingredients

  • 2 mangoes, sliced

  • 2 avocados, sliced

  • 8 cherry tomatoes, cut in half

  • 1/2 small red onion, finely sliced

  • lettuce leaves (optional)

  • salt and freshly ground black pepper

For the Dressing

  • 2 Tbsp olive oil

  • 1 Tbsp white whine vinegar

  • 1 tsp citron juice

  • 1 garlic clove

  • 2 tsp coriander, fresh leaves (optional)


 

Method


Prepare the Ingredients

1. Slice the mangoes and avocados into thin pieces. Cut the cherry tomatoes in half and finely slice the red onion. If using lettuce, arrange the leaves on a serving plate as a base.


Make the Dressing

2. In a small bowl, whisk together the olive oil, white wine vinegar, lemon juice, and minced garlic. Stir in the chopped coriander leaves (if you use) and season with salt and black pepper to taste.
