Meringue Apple Cake

Ingredients

For the apple Topping

  • 8-10 apples

  • 2 tbsp sugar (optional)

  • 1 tsp cinnamon

For the Biscuit

  • 2 yolks

  • 4 tbsp sugar

  • 4 tbsp vegetable oil

  • 4 tbsp cream

  • 4 tbsp all purpose flour (plus 1 tbsp if needed)

  • 1 tsp baking soda

For the Meringue

  • 2 egg whites (use the two from the yolk)

  • 2 tbsp sugar (plus one, if desired)


Method

Prepare the Filling


1. Start by peeling, coring, and grating the apples. Use your hands or a sieve to squeeze out the juice. Sprinkle sugar over the grated apples and stir to coat them.


2. In a saucepan set over medium heat, add the prepared apples. Sauté them until they become soft, which should take about 2-3 minutes. Remove the saucepan from the heat and add the cinnamon. Set this apple mixture aside.


Prepare the Biscuit

3. Preheat your oven to 180°C (360°F) and generously grease and line a 20 x 30 cm rectangular pan with baking paper.


4. In a bowl, cream the egg yolks with sugar until the mixture becomes a pale yellow. Gradually, add the oil.
