Ingredients
Serves 4
200g salmon fillet, without skin, cut into pieces
100g cherry tomatoes,
2 mangos, peeled and cut into pieces
4 tablespoons orange juice
2 tablespoons soy sauce
Method
1. In a medium bowl, combine the orange jus and soy sauce. Put the salmon cut into pieces and coat. Set aside for 10 minutes.
2. Pre-heat your grill and generously grease your grill grate with a cloth dipped in oil. Beginning and ending with cherry tomatoes, thread one cherry tomato, the salmon onto wood skewers, altering with pieces of mango.
3. Grill the 'kebabs' for about 5-7 minutes, turning occasionally, until the fish is cooked through.
