Sweet Potatoes Fries with Rose Harissa Mayonnaise

What is a Rose Harissa?

This spice blend typically includes hot chili peppers, garlic, caraway, coriander, cumin, and rose petals. The spice blend adds a smoky, slightly sweet and floral flavor to the dish.
When combined with the sweetness of the sweet potato fries and the creaminess of the mayonnaise, the rose harissa provides a nice balance of flavors. The spiciness of the harissa adds a pleasant kick to the dish, while the rose petals provide a unique floral note that is not usually found in traditional spice blends.

Ingredients
600g Sweet Potatoes (about 4 sweet potatoes)
600ml vegetable or sunflower oil
1/2 tsp sumac
1/2 tsp salt
For Harissa Mayonnaise
3 tbsp mayonnaise or vegan mayo
2 tbsp rose harissa
1 lime (unwaxed), zest
juice from 1/2 lime
To serve
lime wedges
Method
1. Peel and cut the sweet potatoes into 0.5 cm in thin chips.
2. In a small bowl, combine the sumac and salt. In another small bowl, combine the mayonnaise, harissa, lime zest and juice.
3. In a large saucepan, pour the oil and bring up to frying temperature (180ºC) over a medium heat. Check the temperature by dropping in a potatoes chip. If it turn brown in few second, it is ready.
4. Fry the chips in the hot oil in batches, making sure not to overcrowd the pan. Turn occasionally to all sides cook and brown evenly, about 6-10 minutes for each batch.
5. Use a slotted spoon to carefully transfer the fries to a plate lined with kitchen paper. Sprinkle the sumac salt all over the fries while still hot. Serve with the mayonnaise for dipping and wedges of lime alongside.
