Turkey Schnitzel Stuffed with Mozzarella and Ham
A delicious Turkey Schnitzel with smoked ham and soft cheese is so tasty and tender that will melt in your mouth.
Ingredients
Serves 6
4 turkey breast cutlets
200g semi-soft cheese, Havarti or mozzarella cheese, cut into strips
100g ham, smoked, cubed
3 Tbsp cheese cream
50g oil
salt and black pepper
For the Sauce
1 cloves of garlic, sliced
2 shallots, minced
1 Tbsp butter
cherry tomatoes
75 ml, Port wine
100 ml chicken broth
50 ml cream for cooking
1 tsp flour
fresh fresh herbs - rosemary and thyme
salt and black pepper
Method
1. Place the turkey breast cutlet between two sheets of plastic wrap and gently pound with flat side of meat mallet.
2. In a medium bowl combine the cheese cream with the ham. Set aside.
3. Season each turkey cutlet with salt and black pepper. Rub the cream cheese mixture all over and add the cheese cut into strips. Roll up each cutlet and secure with a couple of toothpicks.
4. In a large saucepan add the oil and cook the turkey rolls over medium heat for 8-10 minutes or until they are light golden brown.
Make the Sauce
5. In a saucepan heat the butter, under medium heat. Add the shallots, the garlic, cherry tomatoes and thyme. Cook for 2-3 minutes, stirring. Set aside the cherry tomatoes.
6. Sprinkle the flour and cook for few seconds, stirring. Add the chicken stock, the cream, the Port wine, salt and fresh grounded pepper. Simmer for few minutes or until obtaining a homogeneous sauce.
7. Serve the Turkey Schnitzel with the sauce, cooked cherry tomatoes and fettuccine pasta (if desired).
