2 large eggs, at room temperature
200g plain (all-purpose) flour
2 and 2/3 teaspoons baking powder
125ml whole milk, at room temperature

150g powdered (icing) sugar
2 to 2.5 tablespoons fresh lemon juice
Method
Prepare the Cupcakes:
1. Preheat your oven to 180°C (160°C fan) or 350°F. Line a 12-cup muffin tin with paper liners.
2. In a large mixing bowl, cream together the softened butter and caster sugar until the mixture is light and fluffy, about 3-4 minutes.
