Ingredients
5 large ripe bananas, divided (keep 1 banana for topping)
Dry Ingredients
250 g (2 cups) plain flour
100 g (½ cup, packed) light brown sugar, plus 1 tsp for topping
1 tsp baking powder
1 tsp cinnamon
Pinch of salt
Wet Ingredients
55 g (¼ cup) unsweetened almond milk (or oat milk)
55 g (¼ cup) vegetable oil
1 tsp pure vanilla extract
Add-ins (Optional)
100 g (⅔ cup) chopped dark chocolate or vegan chocolate chips
Method
1. Preheat your oven to 180°C (350°F). Grease a 9x5-inch loaf pan or line it with parchment paper for easy removal. Set aside.
2. Using a fork, mash 4 bananas until smooth. Keep the 5th banana aside to slice for topping later.
3. In a bowl, whisk together the flour, brown sugar, baking powder, cinnamon, and salt.
