White Fish with Garlic and Honey

What is Halibut Fish
Although it is a low fat fish, the Halibut Fish has firm white flesh with large flakes and a rich taste. In addition to its mild and sweet taste, halibut has a very lean, white flesh that is ideal for frying, grilling, roasting, or poaching.
Packed with micronutrients, halibut is an excellent source of selenium, a powerful antioxidant that decrease inflammation. Halibut is also a good source of protein and is rich in vitamin B12, vitamin D and niacin, helping to prevent heart disease.
Ingredients
Serves 4
2 Halibut fillet or other firm fish
3 Tbsp fresh parsley, finely chopped
5 Tbsp honey
1 Tbsp mustard
1 Tbsp black pepper, coarsely ground
4 garlic cloves
1/2 tsp sea salt
1 lemon juice
Method
1. In a large bowl, mix the fish with the lemon juice, parsley, honey, mustard and garlic. Season with salt and pepper, cover and marinate for at least 15 minutes.
2. Heat the oil in a heavy frying pan and add the fish. Cook the marinate fish over medium heat until easily flaked with a fork, turning gently once or twice. Serve immediately, accompanied by Basmati Rice or served on a bed of greens – beans, broccoli or spinach – with a simple butter lemon sauce.
