How to Prepare Zucchini Goat Cheese Quiche

2. Whisk together the eggs, crème fraiche, milk, salt and pepper
3. Transfer the pie crust to a 23 cm (9-in) pie plate. Spread zucchini evenly over bottom. Pour egg mixture over the top.

Method
Preheat the oven to 180°C (350°F).
Heat oil in a skillet over medium-low heat. Add the sliced zucchini and cook, stirring occasionally, until the zucchini is tender and lightly browned, about 10 minutes. Transfer the cooked zucchini to a plate and set aside.
In a bowl, whisk together the eggs, crème fraîche, milk, salt, and pepper. Set aside.
Unroll the pastry sheet onto a lightly floured surface and roll it into a 30 cm (12-inch) circle. Transfer the dough to a 23 cm (9-inch) pie plate and press the edges into the sides of the plate.
Spread the zucchini evenly over the bottom of the pastry shell and dot with goat cheese. Pour the egg mixture over the top.
Bake for 40 to 45 minutes, or until puffed and lightly browned. Remove from the oven and let cool at room temperature before serving.
